teriyaki mushroom yakitori
you will need
- 300g oyster mushrooms
- 100g itsu teriyaki sauce
- 5g chives, roughly chopped
- 5g white sesame seeds
- 6-8 wooden/metal skewers
let's get cooking
step 1
if using wooden skewers, soak in cold water while you prep the mushrooms - this stops them from catching alight on the grill or splintering
step 2
add the teriyaki sauce to a large bowl and add the mushrooms, tearing any larger ones into smaller chunks. toss to coat and leave to marinate for 10 minutes [or up to 30 minutes]

thread the mushrooms through the skewers, piercing and folding the mushrooms through a few times to make sure they stay on the skewer
step 4
to cook your skewers, grill on the BBQ or a griddle pan for 10 minutes on a medium heat, turning regularly. you want the mushrooms to be golden and caramelised
step 5
once cooked, transfer to a plate. garnish with sesame seeds and chive. serve alongside gyoza, bao or sticky rice, enjoy!
