soba noodle salad

you will need

  • 1 itsu miso'easy sachet
  • 20g olive oil
  • 20g white wine vinegar
  • 8g white sugar
  • 4 spring onions
  • 6 radishes
  • 1/2 large carrot
  • 1/3 cucumber
  • 100g edamame beans
  • 30g sunflower and pumpkin seeds
  • 5g sesame seeds
  • 2 bunches itsu soba'noodles

let's get cooking

  1. step 1

    place two itsu soba'noodle bunches into a pan of boiling water and simmer for 5 minutes. when cooked, wash in cold water until the noodles are cold and leave to drain in a sieve.

  2. step 2

    slice the carrot, radish and cucumber into thin matchstick size pieces. chop the spring onion into rounds

  3. step 3

    in a small bowl, whisk the sugar, olive oil and vinegar into the itsu traditional miso'easy

  4. step 4

    mix the vegetables through the noodles and top with the dressing and seeds
