Pour boiling water over the rice noodles, leave to stand for 10 mins [or until cooked to your liking] and drain.
While the noodles are cooking, pan-fry the beef tenderloin with some olive oil to desired level and slice as thin as possible.
Add a carton of beef pho broth for noodles to a pot and heat to a simmer.
When the noodles are cooked, separate them into two bowls and pour over the simmering beef pho broth for noodles
Top with sliced beef, Thai basil and coriander.
Finish with fine chopped red chilli and a lime wedge.
