Boil water and cook the rice according to instructions. Heat a large frying pan or wok with oil
Stir fry the chicken for 8 minutes until cooked. Set aside and shred into small pieces with a fork
Stir fry the vegetables until tender. Drain the rice and add the rice and chicken back into the pan
Add the sachet of itsu miso and gently fry everything for 1 minute. Add 1 large mug of boiling water and simmer gently for 5 minutes
To serve, pour into a large bowl and sprinkle with pumpkin seeds
