miso butternut squash soup + side of bao'buns

you will need

  • 400g butternut squash, cut into small chunks
  • 1 carrot, sliced
  • 2 onions, chopped
  • 1 garlic bulb, cut in half
  • 2 celery sticks
  • 1 vegetable stock cube, dissolved in 1 litre of water
  • 2 tsp ginger, finely grated
  • 210g butter beans, drained
  • 1 sachet of itsu miso'easy traditional
  • itsu bao'buns [any flavour]

let's get cooking

  1. step 1

    Place butternut squash, carrots, onions, celery sticks and garlic bulb in the smaller drawer of the Philips airfryer. Cook for 25 mins at 180C

  2. step 2

    Squeeze out the garlic from the bulb, add in the vegetable stock, butter beans, itsu miso'easy and ginger with the roasted veg for 10 mins at 180C

  3. step 3

    Meanwhile, steam the itsu bao'buns for 15 minutes using the other drawer

  4. step 4

    Using a hand blender, blitz the soup ingredients until smooth

  5. step 5

    Portion out the soup, garnish with sesame seeds and serve with itsu bao'buns
