miso'aubergine biang biang noodles

you will need

  • 1 pack of itsu miso'aubergine
  • 1 pack of itsu restaurant'ramen flat noodles
  • 2-4 tsp crispy chilli oil [depending on heat level]
  • 4 tsp rice vinegar
  • 1 tsp ginger, minced
  • 2 tsp sesame oil
  • 2 spring onions, finely sliced

let's get cooking

  1. step 1

    bring a saucepan of water to the boil and add noodles. Cook for 4 minutes

  2. step 2

    once noodles are cooked, drain and wash well with cold water to prevent noodles from sticking together

  3. step 3

    [to make the chilli sauce] add the crispy chilli oil, rice vinegar, ginger & sesame oil together and mix to combine

  4. step 4

    heat a large pan or wok and add the miso'aubergine. Cook the aubergine according to pack instructions

  5. step 5

    lower the heat and add the sachet of miso sauce and chilli sauce and mix well

  6. step 6

    add the noodles and mix well for 1-2 minutes and then remove from heat

  7. step 7

    garnish with spring onion and enjoy!
