slice the beef into thin strips around 2-3mm thick
cut each spring onion into 4 pieces
place the steak strips in a bowl with 50ml of the Korean bbq sauce, mix through and marinade for minimum 30 minutes or ideally overnight
prepare the sushi rice according to the on pack instructions
heat a larger frying pan/wok over a high heat and add the sesame oil, beef and spring onions
cook the streak for 3-5 minutes depending on how well done you enjoy it, then stir in the sesame seeds and the rest of the Korean BBQ sauce
tear the lettuce cups from the stem of the lettuce and spoon in the sushi rice and the Korean BBQ glazed steak
drizzle with a little extra Korean BBQ sauce and serve with kimchi or pickles for a proper taste of Korean BBQ!
