crispy'fritters with a smashed cucumber salad

you will need

  • 1 pack of itsu pumpkin crispy'fritters
  • 1/2 cucumber
  • 1 carrot, peeled into ribbons
  • 100g edamame beans
  • 2 spring onions, finely sliced
  • 2 tbsp rice wine vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup

let's get cooking

  1. step 1

    cook crispy'fritters according to pack instructions

  2. step 2

    to make the smashed cucumber salad, take a rolling pin and lightly smash the cucumber until it breaks apart

  3. step 3

    cut the cucumber into smaller chunks and add to a bowl with the carrot ribbons, rice wine vinegar, soy sauce, sesame oil and maple syrup

  4. step 4

    leave the carrots and cucumber to sit in the sauce for 10 minutes

  5. step 5

    then add the edamame and spring onions

  6. step 6

    to serve, place a bed of the smashed cucumber salad and top with crispy'fritters
